The family Sunday pork roast, you can cook this quickly, allow 25-30 mins in a hot overn per 500g so a 1.5kg roast should take 11/2 hours. Allow 200-250g meat per person and ask for skin on, scored to make a crispy tasty crackling. Sprinkle with salt and cook on a high heat to get that crackling going at the beginning, as the skin starts to blister then reduce the heat for the remainder of the cooking time. Serve with apple sauce made with bramley cooking apples. It?s a classic.
